Spring Asparagus...

The thing about living in the country is that neighbors come together to help each other. Our neighbor passed away this spring and his sister asked for help in tending his 100+ colonies of asparagus. My mom and Kaziah picked over 13lbs of the yummy greens during the first picking and another 9lbs the second!

Needless to say, asparagus graced the menu every evening, and a few mornings, for a few weeks. We even managed to pickle a few jars! Although, roasting has got to be my favorite way to prepare asparagus -so fast and easy and yummy with a bit of parmesan sprinkled on before serving.
